Straw Hat Makers - Any Suggestions or References?

I'm looking for someone who can make a few straw Panamas and fedoras. I'm yet to be an regular hat wearer, so I don't know anything about the process, materials, or varying qualities. Can anyone point me in the right direction with a reference or suggestion (or even literature)? I don't mind traveling to their shop's location for measurements and fittings, whether they be in Europe or back stateside. I'm searching for the straw equivalent of a 10 oz merino in 120, under $1,000 per hat. I'm currently aware of Optimo and Borsalino.
