Tie width---where is it headed?

My daughter's wedding last weekend brought out the fact that, living in a laid back part of California and not dressing frequently, my ties are woefully wide! I did not want to look like the old guy in the photos, so, living in a college town, I did manage to find a very nice tie, albeit a bit on the thin side to my eye (2 1/2") . I found a place in New York where I can send ties to have them go on a diet (TieCrafters). The question is about the size.

I have one suit (a midnight blue Canali suit) and one blazer (a Zegna black blazer) and wear them no more often than a few times a year, the blazer more than the suit. I am 5'10 and 195 pounds, adding that info as for proportional info. My ties are Armani, Emporio Armani, and Brooks Brothers--I am fairly traditional in my taste, and my weight is such that highly tailored clothing doesn't feel comfortable on me--at 70, that is unlikely to change, even as an active person my age.

My question: what size is likely to hold me for the next few years? I suspect it is somewhere between 2 3/4 and 3 1/4, but I would like some input before I send off the ties for a "diet". (Also, does anyone have any other suggestions for a place to do the tie surgery?)
